Bacon Cheeseburgers with Spicy Mayo

Ingredients

  • 4 slices bacon
  • 1 1/2 lb ground beef
  • 2 tsp Worcestershire
  • Kosher salt and black pepper
  • 1/2 cup mayo
  • 2 tbsp Sriracha
  • 1 tbsp ketchup
  • Vegetable oil, for the grill
  • 4 thick slices cheddar cheese
  • 4 sesame hamburger buns, split
  • Shredded lettuce, for topping

Directions

  1. Preheat a grill to medium high. Cook the bacon in a large nonstick skillet over medium-high heat, turning, until browned and crisp, about 7 minutes. Transfer to a paper towel-lined plate to drain; break each slice in half.

  2. Meanwhile, combine the ground beef, Worcestershire, 1 1/2 tsp salt, and a few grinds of pepper in a large bowl. Mix with your hands until just combined. Form the mixture into four 3/4-inch-thick patties. Press your thumb into the center of each patty to make a 1/2-inch deep indentation.

  3. Combine the mayo, Sriracha and ketchup in a bowl. Brush the grill with vegetable oil. Grill the patties until marked and cooked through, about 3 minutes per side; top each with a slice of cheese during the last minute of cooking and cover to melt.

  4. Toast the buns cut-side down on the grill. Serve the patties on the buns; top with the spicy mayo, bacon and lettuce.
