Apple Orange Salad

Good with ham, pork, duck or sausage.

Ingredients

  • 2 red-skinned eating apples
  • 1 can (11 oz.) mandarin-orange wedges, drained
  • 1/3 cup frozen orange-juice concentrate
  • 4 cups thinly shredded salad greens
  • 1/4 cup vegetable oil
  • Salt and pepper
  • Toasted chopped walnuts or filberts

Directions

  1. Core apples and cut in eighths. Slice thin crosswise and combine in mixing bowl with next 2 ingredients. Toss lightly to mix.
  2. Just before serving, put greens in salad bowl, add fruit mixture and pour oil seasoned with salt and pepper on top. Toss, then sprinkle with nuts.
