Apricot Nectar Cake

Ingredients

  • 1 pkg. yellow cake mix
  • 4 eggs
  • 3/4 cup cooking oil
  • 1 1/4 cups apricot nectar (1 can)
  • 1 tsp. orange extract
  • Topping:
  • 2 cups powdered sugar
  • 1/2 cup orange juice

Directions

  1. Mix together all ingredients. Pour into tube pan and bake 1 hour at 300 degrees. Let cool in pan for few minutes.

  2. Invert onto cake platter with dome while still hot.

  3. (Best if lid is airtight to keep it moist.)

  4. Poke holes through hot cake. Pour topping over cake and close lid while still hot. Cake will steam,

  5. but that is what makes and keeps the cake moist.

  6. Toppings:

  7. Mix powdered sugar and juice together; stir well.
