Apricot Sundae Sauce

Ingredients

  • 1 jar (12 oz.) apricot preserves
  • 1/3 cup light brown sugar
  • 1/3 cup unsweetened pineapple juice
  • 1 1/2 tsp. grated lemon zest

Directions

  1. Combine all ingredients in a microwavable bowl. Heat on high heat for 2 minutes. Stir until sugar is dissolved. Serve warm or at room temperature.

  2. Note: If you used crushed pineapple (packed in its own juices) as one of your alternate toppings, drain and reserve the juice to use it instead of the unsweetened pineapple juice.
