Artichokes a la Grecque

Ingredients

  • 1 cup water
  • 1 10oz. pkg. frozen artichokes
  • 8 Tbsp. lemon juice
  • 1/4 cup olive oil
  • 3 peppercorns
  • pinch of thyme
  • pinch of fennel seeds
  • pinch of coriander seeds
  • 1 small bay leaf

Directions

  1. In large, heavy skillet, cook artichokes in boiling water for 5 minutes, or until they are separated. Add all remaining ingredients. Bring to boil. Cover and simmer for 20 minutes. Cool in cooking liquid. Serve artichokes with 4 Tbsp. liquid.
