Artichoke and Parmesan Dip

Ingredients

  • 1 (14 oz.) can artichokes, drained
  • 1/2 cup freshly grated Parmesan
  • 3/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 clove garlic, mashed with a pinch salt
  • 2 tsp. lemon juice
  • 1 scallion, chopped
  • Hot pepper to taste

Directions

  1. Combine all ingredients in a food processor and blend until smooth. Serve with French bread slices or pita chips.
