Lasagna rolls – red sauce – vegetarian

  • 1 package lasagna noodles
  • 2 Jars marinara
  • 8oz shredded mozzarella cheese
  • 16oz ricotta
  • parmesan cheese
  • baby portobello mushrooms
  • white onion
  • garlic
  • vegan Sausage


  1. first heat water to boiling and soak lasagna noodles in a casserole pan. 25-30 minutes.

  2. Cheese mixture: Mix together 12-14oz ricotta cheese, 4oz mozzarella cheese, parmesan cheese, 1 tsp salt, 1 tsp pepper, 1 tsp italian seasoning. Mix together and refrigerate while noodles soak.

  3. Other mixture: heat 2 Tbsp oil in skillet and sauté in this order. Vegan sausage (chopped), Mushrooms, white onion, garlic. total cook time 6-7 minutes.

  4. Assemble: Layout lasagna noodle and spoon cheese mixture first followed by other mixture.

  5. Place in casserole dishes with some marinara added to bottom.

  6. Once all lasagna rolls made and laid in pan, cover with remaining marinara and top parmesan cheese and remaining mozzarella cheese.

  7. Bake at 375 for 20-25 minutes
