Kale and Pomegranate Salad

  • For the Salad:
  • 12 leaves Dinosaur kale, stripped off the stems and thinly slices
  • 1/2 head raddichio, thinly sliced
  • 4 radishes, thinly sliced
  • seeds from half a large pomegranate (about 1/2 a cup)
  • A handful or 2 of roasted and salted pistachios, shelled
  • For the Dressing:
  • 5 tablespoons extra virgin olive (plus more to taste)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon pomegranate molasses
  • 1/2 tablespoon dijon mustard


  1. Put all the salad ingredients in a large bowl.

  2. Shake or whisk together the dressing ingredients in a jar or mixing bowl.

  3. Depending on how heavily dressed you like you salad you may end up with more dressing than you need.

  4. Start with half, toss, taste, then add more as needed.
