Asparagus with Citrus Vinaigrette

Ingredients

  • 2 Tbsp. fresh orange juice
  • 2 Tbsp. white wine vinegar
  • 2 Tbsp. olive oil
  • 4 tsp. Mrs. Dash
  • lemon pepper
  • 2 tsp. grated orange peel
  • 1/2 cup canned Mandarin oranges, drained
  • 1 lb. asparagus, trimmed and cut diagonally into 2-inch pieces

Directions

  1. Whisk first 5 ingredients in small bowl until blended. Set dressing aside.

  2. Bring 3 cups water to boil in saucepan. Add asparagus and cook 2 minutes. Drain, plunge immediately into ice water. Transfer to bowl, add dressing and Mandarin oranges. Toss to coat asparagus thoroughly.
