Mountain Man Meatloaf

Ingredients

  • 1 medium onion
  • 1 lb. lean ground venison or elk (can use beef if desired)
  • 1 large egg
  • 10.75 oz. can Campbell's Beef with Barley Soup
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup chopped bell pepper (optional)
  • 1 cup tomato or V8 juice
  • 1-2 cup oatmeal
  • 1/2 cup ketchup

Directions

  1. Heat oven to 350 degrees. Grease two round cake pans or one 8 × 8 × 2 inch pan.

  2. Grate onion into mixing bowl. Add meat, egg, soup, salt, pepper, bello pepper, juice and 1 cup oatmeal; combine. Adjust oatmeal to make very moist mixture (too much oatmeal will make meatloaf dry).

  3. Spread meatloaf in pan(s). Do not allow mixture to touch sides of pan. Cover with ketchup. Bake 60-90 minutes until meat is done.
