Simple Squirrel and Dumplings

Ingredients

  • 4-6 squirrels
  • 1/2 cup water
  • 1 medium onion, chopped
  • 1 Tbsp. seasoned salt
  • 1 tsp. black pepper
  • 3-4 14oz. cans chicken broth
  • 1 10.5 oz. can cream of chicken soup
  • 1 pkg. Mary B's Open Kettle Dumplings

Directions

  1. Heat oven to 275 degrees.

  2. Place whole squirrels I covered roasting pan. Add water, onion salt and pepper (preferably coarse). Bake (covered) 2-4 hours or until squirrels are very tender. Remove squirrels; debone.

  3. Add squirrel broth and 3 cans chicken broth to large pot. Bring to boil and cook dumplings according to package instructions. Add squirrel meat and soup. Bring back to temperature.

  4. If needed, use remaining can of broth to reach desired consistency.
