Asparagus Stir-Fry

Ingredients

  • 1 lb. fresh asparagus
  • 1 tsp. cornstarch
  • 1 Tbsp. soy sauce
  • 1 Tbsp. vegetable oil
  • 4 green onions sliced
  • 2 cups mushrooms. sliced
  • 2 tomatoes, cut in chunks
  • Rice, cooked

Directions

  1. Snap off base of asparagus and slice into 2-inch lengths.

  2. In small bowl, blend water and cornstarch. Stir in soy sauce and set aside.

  3. Stir -fry asparagus and green onions in oil for about 4 minutes, stirring constantly. Add mushrooms and cook another minute, Stir and push vegetables to the sides; simmer for a minute, then stir in tomatoes and heat through.

  4. Serve with cooked rice.
