Amaretto Cake

Ingredients

  • Cake:
  • 4 eggs
  • 1 (4-sering size) box lemon-flavor instant pudding mix
  • 1/2 cup vegetable oil
  • 1 (18 1/2 oz.) pkg. orange cake mix
  • 2 Tbsp. amaretto
  • 1/2 cup PLUS 2 Tbsp. water
  • 1 tsp. butter flavoring
  • Glaze:
  • 2/3 cup orange marmalade
  • 1/3 cup apricot preserves
  • 1/4 cup amaretto
  • 1/2 to 1 cup slivered almonds, toasted

Directions

  1. To make the cake:

  2. Beat eggs until light. Add all remaining ingredients. Beat for 5 minutes with electric mixer. Pour into greased Bundt pan. Bake at 350 degrees for 45 to 60 minutes.

  3. To make the glaze:

  4. Combine marmalade, apricot preserves and amaretto and heat until melted.

  5. Drizzle onto cooled cake and sprinkle with the almonds.

  6. Note: to toast almonds, spread nuts on cookie sheet and place in 350 degree oven 5 to 10 minutes, watching carefully so they don’t burn.
