Stuffed Anaheim Peppers

Ingredients

  • 4 Anaheim peppers
  • 1 lb. ground beef
  • 12 cup chopped onion
  • 1/2 cup pepper jack cheese
  • 1 Tbsp. chili powder
  • 1 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • topping:
  • 1 8 oz. can tomato sauce
  • 1/4 cup chopped onions
  • 1/2 cup pepper jack cheese

Directions

  1. Either on a grill or in a broiler pan, sear the peppers until skins blister, usually about 7-8 minutes depending on heat source. After the skins blister, place the peppers in a dish and cover with foil and let steam for about 5 minutes.

  2. Meanwhile, back in the kitchen, crumble and stove-top cook the hamburger, onions and other seasonings to resemble taco meat. Cook until hamburger is done and the onions are tender. Drain the grease and put on a paper towel to absorb any drippings.

  3. After the peppers have rested for about 5 minutes, very carefully remove the skins. Split the peppers and gently remove the seeds with a spoon. Place the peppers in a 9 × 9 inch baking dish. Fill the peppers with the hamburger mixture and top with 1/2 the cheese.

  4. Pour the tomato sauce over the peppers, cover and microwave on high for 5 minutes. When the time is up, wait one minute and remove from microwave.

  5. Carefully remove cover and sprinkle remaining cheese and onion atop the peppers. Cover and let sit for another minute.

  6. Serve with a crisp, garden salad.
