Quick Pickled Jalapenos

Ingredients

  • About 10 jalapeno peppers
  • 3/4 cup distilled vinegar
  • 3/4 cup water
  • 1 to 3 Tbsp. sugar
  • 1 Tbsp. kosher salt
  • 1 clove garlic, crushed

Directions

  1. Slice the peppers and place in a clean jar (or jars) with a tight-fitting lid.

  2. In a small saucepan, combine the vinegar, water, sugar, salt and garlic. Bring to a boil over medium heat, stirring to dissolve sugar and salt.

  3. Pour brine over the peppers in the jar. Cool to room temperature.

  4. Cover tightly and refrigerate.

  5. makes about 2 cups
