Walts Favorite Hush Puppies Recipe

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1 tablespoon diced shallot
  • 2 tablespoons finely chopped bacon
  • 1 1/2 teaspoon chipped parsley
  • 1/4 cup corn, fresh, frozen, or canned
  • 1 1/4 teaspoons baking powder
  • 2 teaspoons sugar
  • 1 1/2 teaspoon fine/table salt
  • 1/2 teaspoon black pepper
  • 1 egg
  • 1 cup milk
  • Oil or shortening, for frying

Directions

  1. Preheat oil to a steady 350 degrees.
  2. In a large mixing bowl, combine all ingredients but egg, milk, and oil.
  3. In a separate, small bowl, combine the egg and milk and beat until a light yellow color.
  4. Just before frying, add wet to dry ingredients and mix well.
  5. Using a small spoon, scoop out about a tablespoon of dough and fry in the oil until golden brown on all sides, about 3 to 4 minutes, turning once to ensure even browning.
  6. Remove from oil and drain on paper towels.
  7. Serve warm, drizzled with butter or maple syrup, or tossed in Cajun seasoning.
