Lemon Vinaigrette – Boma

Ingredients

  • 1 Tablespoon Dijon mustard
  • ⅓ cup Chardonnay or Champagne vinegar
  • ⅓ cup fresh squeezed lemon juice
  • Zest from 11/2 lemons
  • 11/4 cups olive oil
  • Kosher salt, to taste
  • black pepper, fresh ground, to taste

Directions

  1. Combine all ingredients except olive oil, salt, and pepper in a bowl and whisk until blended. Slowly add in olive oil. Season to taste with salt and pepper. Allow to sit in the fridge overnight for the best flavor.
  2. Alternatively, combine all ingredients but salt and pepper in a blender and mix until blended. Adjust seasoning with salt and pepper, to taste. Allow to sit in fridge overnight for best flavor development.
