Banana Bread with Cardamom

Ingredients

  • 1/2 cup butter, plus more for greasing
  • 1 cup jaggery, grated Muscovado brown sugar
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp. ground cardamom
  • Pinch of salt
  • 1 cup mashed ripe bananas, PLUS1 banana for decoration
  • 2 Tbsp. milk
  • 2 eggs

Directions

  1. Butter 9 × 5 inch loaf pan. Heat oven to 350 degrees.

  2. In a small saucepan, combine the butter and sugar and melt over a very low heat. Stir until well mixed with the consistency of melted chocolate; set aside to cool.

  3. In a large bowl, sift together the flour, baking powder, cardamom and salt, set aside.

  4. In a separate bowl, add the mashed banana and milk, and whisk in eggs one by one. Add butter mixture. Whisk again.

  5. Gently fold the wet ingredients into the flour mixture. Pour batter into the prepared pan. Slice the remaining banana lengthwise into 1/4-inch slices and place over the top of the batter. Bake for 45 minutes to an hour, or until a skewer comes out clean. Cool before slicing.
