Zucchini Carrot Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup firmly packed light brown sugar
  • 2 tsp. baking powder
  • 1/8 tsp. ground cloves
  • 1/8 tsp. freshly grated nutmeg
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. salt
  • 1/2 cup oil
  • 2/3 cup finely shredded carrots
  • 3/4 tsp. vanilla extract

Directions

  1. Preheat oven to 375 degrees. Grease a 9 × 5 × 3

  2. inch loaf pan.

  3. In medium bowl, combine flour, brown sugar, baking powder, spices and salt. Stir to mix.

  4. In large bowl, beat the oil and eggs together. Stir in zucchini, carrots and vanilla. Add the flour mixture and beat until smooth.

  5. Pour into the prepared pan, and bake for 45 to 50 minutes or until a toothpick comes out clean when inserted into center of loaf.
