Vegetarian Burrito Bowls

Ingredients

  • 1 white Onion
  • 1 can tomatoes with green chili's
  • 1 bunch Cilantro
  • 2 cans seasoned black beans
  • Brown Rice
  • 3 large Avocados
  • 8ox mexi or queso quesadilla cheese.

Directions

  1. 1) Bring water for brown rice to a boil. When boiling dump in brown rice (2-3 cups total of brown rice)

  2. 2) Pico Mix, places chopped cilantro and 1 can tomatoes with green chilis into a mixing bowl. Finely chop enough onion so that there is almost an even mix of onion and tomato. Season with a pinch of salt, pepper, cumin.

  3. 3) Guac mix, remove pits and skin from the three avocados and place into a bowl to mash. Mash with a pinch of salt, pepper, onion power,garlic powder, red pepper flakes.

  4. 4) Heat the 2 cans of beans

  5. 5) When brown rice is finished, assemble bows with rice and beans, place cheese on top of this. finish assembly with guac and pico mix to taste.
