Apple- Molasses Bread

Ingredients

  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 3 eggs
  • 2 cups sifted all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 cup molasses
  • 1 cup canned applesauce
  • 1 cup chopped raisins or dates
  • 1/2 cup chopped walnuts or pecans

Directions

  1. Preheat oven to 325 degrees. Grease and lightly flour a 9 × 5 × 3-inch loaf pan.

  2. In a large bowl with electric mixer, beat butter until soft; gradually add sugar, beating until light and fluffy. Beat in eggs, one at a tie.

  3. Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg.

  4. Combine molasses and applesauce. Add flour mixture, alternating with molasses mixture, to butter and sugar combination, beating well after each addition. Stir in raisins and walnuts.

  5. Pour batter into prepared pan. Bake for 1 hour and 15 minutes. Let cool 5 minutes in pan. Remove to wire rack to cool completely.

  6. Store, wrapped, in refrigerator. Excellent with whipped cream cheese. This bread freezes well.
