Applesauce- Pecan Bread

Ingredients

  • 2 large eggs
  • 1 cup canned applesauce
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 3 Tbsp. milk
  • 1 tsp. cinnamon, divided
  • 1/4 tsp nutmeg
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 cups all-purpose flour
  • 1 1/4 cups finely chopped pecans, divided
  • 1/2 cup mixed candied fruit
  • 1/4 cup packed light brown sugar
  • Confectioners' sugar (optional)
  • Candied green pineapple and red cherries

Directions

  1. Beat eggs until foamy. Stir in next 4 ingredients. Mix 1/2 tsp. cinnamon and next 5 ingredients. Gradually add to first mixture, beating with spoon until well mixed. Stir in 1 cup nuts and the fruit. Spread in well-greased 9 × 5 × 3 inch loaf pan.

  2. Mix remaining nuts and cinnamon and the brown sugar. Sprinkle evenly on top of batter and press lightly with hand.

  3. Bake in preheated 350 degree oven 1 hour, or until done. To keep top from getting too brown, spread piece of foil over top during last 1/2 hour of baking.

  4. Turn out on rack, turn right side up and cool. Wrap in foil and store in refrigerator. Will keep about a week. Can also be frozen. Sprinkle with confectioners’ sugar, if desired. Decorate with pineapple and cherries
