  • 2 C instant mashed potatoes- cooked according to instructions
  • 1 t salt
  • 2 eggs-room temp
  • 2 C all purpose flour( white lily brand is very light)-will add 1-2 C as you work the dough
  • Chicken stock to cook gnocchi in


  1. Knead dough until it’s soft and smooth(like bread dough)

  2. Roll dough and cut into strips

  3. Boil chicken broth (or water) with a little oil and salt

  4. Dice chicken strips into small dough pieces and roll over into gnocchi shapes

  5. Cook 4-5 min(I cooked about 8-9 min)
