Vanilla- Rosemary Lemonade

Ingredients

  • 1 cup honey
  • 1/2 vanilla bean, split
  • 1 sprig rosemary, plus more for garnish
  • 4 cups water, divided use
  • 1 cup freshly squeezed lemon juice, plus sliced lemon for garnish

Directions

  1. In a medium saucepan, combine the honey, vanilla bean, rosemary sprig and 3 cups water. Bring mixture to a boil, reduce heat and simmer 5 minutes. Remove from heat, (for a lighter rosemary flavor remove and discard the sprig now, for stronger flavor, leave it in) and cool to room temperature, about 30 minutes.

  2. Strain mixture into a pitcher, discarding vanilla bean pod and rosemary sprig. Stir in lemon juice and remaining water; cover and refrigerate until thoroughly chilled, up to 48 hours. Serve over ice, garnished with lemon slices and rosemary sprigs.
