Healthy Cake/ Muffins

Ingredients

  • 2 1/2 cups powdered milk
  • 2 1/2 cups applesauce
  • 2 1/2 cups old-fashioned oats
  • 2 large apples, chopped
  • 1 cup walnut pieces
  • 1/2 cup raisins
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 2 tsp. pumpkin pie spice
  • Baking spray or pan liners for muffins

Directions

  1. In a large bowl, combine all ingredients and mix well.

  2. Line muffin cups with paper liners. coat paper liners with spray before filling with batter. Bake at 350 degrees for about 15 minutes.

  3. If desired, can be made into a cake: coat a Bundt pan with nonstick spray. Pour batter into prepared pan and bake at 375 degrees for about 25 minutes.
