Slow Cooker Whiskey-Molasses Shredded Beef

Ingredients

  • 1 (2 1/2 to 3 Lb.) boneless beef bottom round roast, or beef chuck center roast, cut into 1-inch pieces
  • 1/2 cup whiskey or non-alcohol beer
  • 1/4 cup vinegar
  • 1 (6 oz.) can no-salt-added tomato paste
  • 1 Tbsp. packed brown sugar
  • 1/4 cup molasses
  • 1 Tbsp. coarse salt
  • 1/2 tsp. cayenne pepper
  • Whole grain sandwich buns for serving

Directions

  1. Combine whiskey, vinegar, tomato paste, brown sugar, molasses, salt and cayenne pepper; pour over roast. Cover and cook on high 4 to 6 hours or on low 8 to 10 hours, or until beef is fork-tender. Remove roast from slow cooker; shred with two forks. Skim fat from sauce as needed. Return beef to slow cooker. Serve beef with sauce on whole-grain buns.
