Apple-Scotch Oat Bars

Ingredients

  • 1 cups (2 sticks) butter, softened
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 cups quick or old fashioned oats
  • 1 medium Granny Smith apple, cored and finely chopped
  • 1 cup butterscotch-flavored baking chips

Directions

  1. Heat oven to 350 degrees. Grease or coat with nonstick cooking spray a13 x 9 × 2 inch metal baking pan.

  2. In a large bowl, beat butter and sugars together until creamy. Add eggs and vanilla; beat well.

  3. In a medium bowl, stir together flour, baking powder and salt. Add flour-mixture to butter-egg mixture beating on low until just combined. Stir in oats, apple and butterscotch chips. Spread mixture evenly in prepared pan.

  4. Bake 35 to 38 minutes, until light golden brown. Cool completely in pan on wire rack. Cut into bars. Store in an air-tight container.

  5. makes 4 dozen bars

  6. Note: If using old fashioned oats, add 2 tablespoons flour.
