Ingredients

  • 6 cups thinly sliced apples
  • 1 Tbsp. lemon juice
  • 1/2 cup brown sugar
  • 1/2 cup PLUS 2 Tbsp. granulated sugar, divided use
  • 1 tsp. ground cinnamon
  • 1/2 cup cold water
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk
  • Ground nutmeg

Directions

  1. In a large bowl, toss apples with lemon juice.

  2. In a separate bowl, combine the brown sugar, 1/2 cup of the granulated sugar and the cinnamon. Add sugar mixture and water to apples and gently toss to coat. Transfer mixture to a Dutch oven with tight-fitting lid and heat to boiling, then boil 1 minute. Turn off heat.

  3. In a medium bowl, sift together flour, the remaining 2 Tbsp. granulated sugar, the baking powder and salt. Stir in enough milk to make a soft dough.

  4. Drop dough by spoonfuls onto apples. Cover pan with lid and simmer over low heat for 20 minutes. To check for doneness, quickly remove lid. Dumplings should look and feel dry to the touch. If dumplings are not done, return lid to pot and cook 5 to 10 minutes more.

  5. Sprinkle with nutmeg and serve.
