Arugula, Radicchio and Romaine salad with garlic croutons

Ingredients

  • 6 tbsp olive oil, divided
  • 2 cups diced white bread
  • 1 tsp minced fresh garlic
  • salt and black pepper to taste
  • 2 cups arugula
  • 2 cups chopped radicchio
  • 2 cups chopped romaine lettuce
  • 3 tbsp fresh lemon juice
  • 2 tsp honey

Directions

  1. Heat 3 tbsp oil in a nonstick skillet over medium. Add bread; cook until toasted, 4-5 minutes, stirring occasionally. Stir in garlic and cook 1 minute more. Season croutons with salt and pepper.

  2. Combine arugula, radicchio, and romaine in a large bowl for the salad; season with salt and pepper.

  3. Whisk together lemon juice, remaining 3 tbsp oil and honey; toss with salad. Top salad with croutons.
