Beer Cheese Fondue

Ingredients

  • 2 cups shredded Gouda
  • 2 cups Emmental cheese
  • 2 tbsp cornstarch
  • 1 1/4 cups Belgian beer
  • 1 garlic clove, smashed and peeled
  • 1 tbsp fresh lemon juice
  • 1 tbsp honey
  • 2 tsp Dijon
  • 2 tsp whole-grain mustard
  • salt to taste

Directions

  1. Toss together Gouda, Emmental and cornstarch.

  2. Heat beer and garlic in a saucepan over medium until simmering/

  3. Stir in cheese a handful at a time, letting each addition melt fully before adding the next. When all the cheese has been added and is melted, stir in lemon juice, honey, Dijon and whole-grain mustard; season with salt.

  4. Transfer fondue to a warm fondue pot and serve immediately.
