Apricot Honey Bread

Ingredients

  • 3 cups whole-wheat flour
  • 3 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 1/4 cups 2% low-fat milk
  • 1 cup honey
  • 1 large egg, slightly beaten
  • 2 Tbsp. vegetable oil
  • 1 cup chopped dried apricots
  • 1/2 cup sunflower seeds, chopped walnuts or almonds
  • 1/2 cup golden raisins

Directions

  1. Preheat oven to 350 degrees.

  2. In a large bowl, combine dry ingredients.

  3. Combine milk, honey, egg and oil in another large bowl. Pour milk mixture over dry ingredients and stir until just moistened. Gently fold in apricots, sunflower seeds, and raisins.

  4. Pour into a greased 9 × 5 × 3 inch loaf pan. Bake for 55 to 60 minutes or until wooden pick inserted near center comes out clean.
