Apricot Nut Bread

Ingredients

  • 3/4 cup water
  • 3/4 cup chopped, dried apricots
  • 1/3 cup raisins
  • 3/4 cup packed brown sugar
  • 3 Tbsp. cooking oil
  • 1 egg, slightly beaten
  • 1/2 cup chopped soda
  • 1/2 tsp. salt

Directions

  1. Combine water, apricots and raisins in 2 cup glass measure.

  2. Microwave for about 2 minutes, on high, or until boiling.

  3. Combine brown sugar, oil and egg, mix well. Stir in fruit mixture and nuts. Add remaining ingredients; stir, pour into (9 × 5) glass loaf dish.

  4. Microwave for 6 minutes on simmer.

  5. Microwave for 3 to 3 1/2 minutes, on high, or until toothpick inserted near center comes out clean. Let stand 5 minutes.
