Apricot-Rosemary Salsa

Ingredients

  • 1/2 cup chopped apricots or peaches
  • 1/4 cup chopped avocado
  • 1/4 cup chopped tomato
  • 1/2 tsp. finely shredded lime or lemon peel
  • 2 Tbsp. lime or lemon juice
  • 1 Tbsp. thinly sliced green onion
  • 1 tsp. snipped fresh rosemary or 1/2 tsp. dried rosemary, crushed

Directions

  1. In a bowl, stir together apricots or peaches, avocado, tomato, lime or lemon peel, lime or lemon juice, green onion, and rosemary. Cover and chill in refrigerator for up to 24 hours.
