Ardis’ Fruit Salsa

Ingredients

  • 1/2 to 3/4 cup EACH finely chopped fresh fruit: strawberries, kiwi, pineapple, mandarin oranges, peaches, bananas or other fruit of choice in equal portions
  • 1 Tbsp. fresh lime OR lemon juice
  • 12 refrigerated flour soft tortillas
  • About 1/2 stick butter
  • 1 cup granulated sugar
  • 3 tsp. ground cinnamon

Directions

  1. Chop fruit into small pieces and place in a large bowl; drizzle lime juice over fruit, stir to mix well and chill at least 1 hour before serving.

  2. Spread flour tortillas with a light film of butter (just enough so that the cinnamon sugar mixture will adhere to the tortillas). Cut tortillas into 4 to 6 equal pieces (triangles); arrange on baking sheets.

  3. Mix together the sugar and cinnamon; sprinkle on top of tortillas and bake at 350 degrees for 10 minutes. Cool.

  4. To serve, spoon fruit onto tortilla pieces or use pieces to dip fruit.

  6. Notes: Fruit should be finely chopped but not pulverized.
