Arkansas Cheese Dip

Ingredients

  • 2 Tbsp. butter or margarine
  • 2 Tbsp. all-purpose flour
  • 1 tsp paprika
  • 1/4 tsp dry mustard
  • 1 scant tsp ground cumin
  • 1 scant tsp. ketchup
  • 1 1/2 tsp. chili powder
  • 1 tsp. juice from jarred jalapeno peppers
  • 1 1/2 cups milk
  • 1/2 jalapeno pepper, minced or mashed, OR the amount desired
  • Dash garlic powder
  • 6 oz. processed cheese such as Velveeta, cubed
  • 2 to 4 oz. shredded cheddar
  • Tortilla chips for serving

Directions

  1. In a saucepan, melt butter over low heat. Stir in flour and cook, stirring constantly, for 1 minute. Add paprika, mustard, cumin, ketchup, chili powder, jalapeno pepper juice.

  2. Gradually stir in milk, stirring constantly. Continue to stir while cooking until thickened. Add minced pepper, garlic powder and cheeses. Cook over low heat until cheese melts. Serve warm with tortilla chips.
