Armenian Shish Kebab

Ingredients

  • 2 lb. boneless leg of lamb, cut in 1/2 inch cubes
  • 1 cup Burgundy wine
  • 1/2 tsp. ground cumin
  • 1/2 lb. small white onions
  • 2 green peppers, seeded and cut in chunks
  • 1 pint cherry tomatoes
  • 1 1/2 lb. zucchini, cut in large chunks
  • 1 can (8 oz.) whole mushrooms, drained
  • 1 bottle oil-vinegar dressing

Directions

  1. Put lamb, wine and cumin in large heavy plastic bag and secure with fastener. Place in bowl to avoid dripping accident. Marinate in refrigerator, turning occasionally, 2 hours or longer, then thread on skewers, reserving marinade, and refrigerate.

  2. Cover onions with boiling water and let stand 5 minutes. Drain, peel and thread on separate skewer.

  3. Put each vegetable on separate skewer, brush with dressing and set aside.

  4. Grill lamb about 3 1/2 inch above white-hot coals, turning occasionally and basting with reserved marinade, 30 minutes. When done, put at edge of grill to keep warm while grilling vegetables.

  5. Grill onions and peppers 30 minutes, cherry tomatoes, zucchini and mushrooms 15 minutes

  6. Note: sirloin-steak cubes can be substituted for the lamb.
