Artichoke Dip

Ingredients

  • 1 1/2 cups water-packed artichoke hearts, drained and chopped
  • 2 Tbsp. chopped red bell pepper
  • 1 Tbsp. nonfat mayonnaise
  • 1 Tbsp. water
  • 1 Tbsp. nonfat Parmesan cheese
  • 1 Tbsp. chopped fresh parsley
  • 1 Tbsp. lemon juice
  • 1 clove garlic, chopped
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves

Directions

  1. Combine artichoke hearts, red pepper, mayonnaise, water, Parmesan cheese, parsley, lemon juice, garlic, basil and oregano in bowl.

  2. Transfer to a blender or food processor and process until smooth. Refrigerate for at least 1 hour before serving.
