Artichokes with Fresh Herb Aioli

Serves 4 people

Ingredients

  • 4 medium artichokes
  • 2 tsp. grated lemon peel
  • 1 Tbsp. lemon juice
  • 1 medium garlic clove, minced
  • 1/2 cup mayonnaise or light mayonnaise
  • 2 Tbsp. milk
  • 2 tsp. prepared horseradish
  • 2 Tbsp. chopped fresh mint
  • 2 Tbsp. chopped fresh basil

Directions

  1. Cut off tips of artichoke leaves with scissors, scrape out center choke with spoon. Cook artichokes in large pot of salted boiling water 30 to 40 minutes or until bottom is tender when pierced with knife and leaves come off easily when pulled. Drain artichokes upside down on paper towels.

  2. Meanwhile, combine remaining ingred9ients in small bowl, serve with artichokes.
