Anatolian Dolmas

Ingredients

  • 4 cups under- cooked rice
  • 1/4 cup olive oil
  • 1/4 cup finely chopped walnuts
  • 1/4 cup currants
  • 2 Tbsp. lemon juice
  • salt and pepper to taste
  • 1 can grape leaves

Directions

  1. Combine the rice with the olive oil, walnuts, currants, lemon juice, and salt and pepper. Spread onto grape leaf. Place a dollop of rice mixture on one end of the leaf. Roll it up into a little log. Repeat with more grape leaves until you run out of ingredients. Layer the dolmas tightly on a medium pan with quarter inch of water in it. Cover and simmer for 20 minutes.
