Ingredients

  • 3 egg whites, at room temperature
  • 1/8 tsp. cream of tartar
  • 1/2 cup sugar
  • 1/2 tsp. almond extract
  • 2 cups 40 % bran flakes

Directions

  1. In a small bowl with electric mixer at high speed, beat egg whites with cream of tartar until soft peaks form. Fold in bran flakes. Drop by teaspoonfuls onto foil or brown paper-lined baking sheets. Leave 1 inch between each cookie. Bake in a 300 degrees oven 1 hour or until cookies are dry. Remove and cool on racks. Store in an airtight container.
