Tomato Cheese Cups

Ingredients

  • 2 medium potatoes (about 2/3 lb.), or 10 oz. frozen shredded hash brown potatoes, thawed and drained
  • 1 cup grated Gruyere cheese
  • 1/4 cup minced fresh onion
  • 1/2 tsp. minced dried chives
  • salt and freshly ground pepper
  • butter
  • paprika
  • 4 thick slices tomato

Directions

  1. Position rack in center of oven and preheat to 350 degrees.

  2. Peel and coarsely grate potatoes, if using fresh. Combine with cheese, onion, chives, salt and pepper to taste.

  3. Generously coat inside of four 6 oz. custard cups with butter and sprinkle with paprika. Divide potato mixture among cups, pressing down firmly.

  4. Bake uncovered about 40 minutes, until edges are brown and crisp and center is no longer moist.

  5. Remove from oven and cool slightly. Loosen with knife and invert each onto tomato slice.
