Spicy Peanut Chicken Kabobs

Ingredients

  • 1/4 cup creamy peanut butter
  • 3 tbsp soy sauce
  • 4 1/2 tsp lemon juice
  • 1 tbsp brown sugar
  • 1 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 to 1/2 tsp cayenne
  • 1 garlic clove, minced
  • 1 large onion, finely chopped
  • 1 lb chicken breasts, cut into 1-inch cubes

Directions

  1. In a small bowl, combine the first 10 ingredients. Set aside 3 tbsp marinade for sauce. Pour remaining marinade into a large Ziploc bag; add onion and chicken. Seal bag and turn to coat; refrigerate overnight. Cover and refrigerate reserved sauce.

  2. Drain and discard marinade. Thread the chicken onto 8 metal or soaked wooden skewers. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.

  3. Grill chicken, covered, over medium heat or broil 4 inches from the heat for 4-5 minutes on each side or until no longer pink. Brush with the reserved sauce before serving.
