Annette’s Marinated Fresh Mushrooms

Ingredients

  • 1 lb. fresh mushrooms
  • 1 cup white vinegar
  • 2 cups water
  • 1/2 cup sliced carrots
  • 1/2 cup sliced celery
  • 1/2 cup red bell pepper strips
  • 1/2 cup green bell pepper strips
  • 1/3 cup olive oil
  • 1 tsp. fresh oregano leaves, crushed, OR 1/2 tsp. dried
  • 3/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp ground black pepper

Directions

  1. Rinse, pat dry and slice or halve mushrooms.

  2. In a medium saucepan. combine mushrooms and

  3. vinegar; bring to a boil. Reduce heat and simmer, covered, for 3 minutes.

  4. Add red and green pepper to saucepan; cover and simmer until all vegetables are tender, about 3 minutes. Drain and set aside to cool.

  5. In a medium bowl, mix olive oil, oregano, salt, garlic powder and black pepper. Let stand 10 minutes. Stir in mushrooms, carrots, celery and peppers. Mix well. Cover and refrigerate at least 2 hours before serving.
