Artichoke Pilaf

Ingredients

  • 2 jars ( 6 oz. each) marinated artichoke hearts
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 cup thinly sliced celery
  • 1 cup chicken broth
  • 1 cup cooked rice
  • 1/3 cup minced fresh parsley
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

  1. Drain artichokes, reserving 3 Tbsp. marinade.

  2. In 2-quart microwave-proof dish, place the reserved marinade, onion, garlic, and celery. Cook on HI 2 1/2 minutes, or until onion is transparent. Stir in remaining ingredients, including artichokes. Cook, covered, on HI 3 minutes, stirring once during cooking. Let stand, uncovered, 5 minutes before serving.
