Chicken and Dumplings

Ingredients

  • Soup:
  • 4 chicken breasts
  • 2 T butter or olive oil
  • 3 tsp. chicken bouillon
  • 3 cups water
  • 4 carrots
  • 1 medium onion
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 3 T flour
  • Dumplings:
  • 1 1/2 cup flour
  • 2 tsp. baking powder
  • 1/8 tsp nutmeg
  • 2 T oil
  • 1 T parsley
  • 1/2 tsp salt
  • 2/3 cup milk
  • 1 egg, slightly beaten

Directions

  1. Brown chicken in butter.

  2. Add onion, bouillon, pepper, bay leaf and water.

  3. Heat to boiling, reduce heat and simmer covered 20 minutes.

  4. Add carrots and simmer covered 15 minutes.

  5. Combine flour with 1/2 cup water and stir into chicken.

  6. Heat until it boils and thickens, stirring constantly.

  7. Mix dumpling ingredients and drop batter into soup with cookie scoop.

  8. Boil covered 12-15 minutes.
