Slow Cooker Vegetable Beef Soup

Ingredients

  • 2 lbs. steak, cubed
  • 2 medium potatoes, peeled and cubed
  • 1 (12 oz.) bag frozen mixed vegetables
  • 3 celery ribs, diced
  • 2 large carrots, diced
  • 1 medium white onion, diced
  • 1 (14 oz.) can diced tomatoes, with juice
  • 5 1/2 cups beef broth
  • Salt and pepper, to taste

Directions

  1. Combine all ingredients in slow cooker. Stir well.

  2. Cook on HIGH for 2 hours, then LOW for 4 hours.
