Black Bottom Cupcakes

Ingredients

  • 6 oz. cream cheese, softened
  • 1/3 cup sugar
  • 1 cup chocolate chips
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 cup water
  • 1 T vinegar
  • 1 egg
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1/2 tsp salt
  • 1/3 cup oil
  • 1 tsp vanilla
  • 1/2 cup chopped almonds

Directions

  1. Line muffin pan with 18 paper cups.

  2. Combine cream cheese, 1/3 cup sugar and egg. Mix well.

  3. Combine flour, 1 cup sugar, cocoa, baking soda, and salt.

  4. Add water, oil, vinegar and vanilla and beat 2 minutes at medium speed.

  5. Fill cups half full. Top each with a tablespoon of cream cheese mixture.

  6. Sprinkle almonds over cream cheese mixture.

  7. Bake 20-30 minutes at 350 until light golden brown.

  8. Cool 15 minutes.

  9. Remove from pans and cool completely.

  10. Refrigerate.
