Mango Pie

Ingredients

  • Crust
  • 1/2 C flour
  • 1/3 C firmly packed brown sugar
  • Pinch salt
  • 1 /3 C butter
  • Filling
  • 4 C sliced mangos
  • 4 t lime juice
  • 1/2 C sugar
  • 1/4 t salt
  • 3 T quick tapioca
  • 1 t lime peel grated

Directions

  1. Blend flour, brown sugar, salt and cut in butter.

  2. Chill. When make pie shell save remaining dough to sprinkle on top of pie before you bake it.

  3. ne pie pan with pastry and bake 5 minutes at 450. Set aside

  4. Sprinkle mango pieces with lime juice. Gently toss with mixture of the next four ingredients.

  5. Turn into pastry shell, heap slightly at center.

  6. Sprinkle some of remaining pastry dough on top of fruit.

  7. Bake 450 for 10 minutes>reduce heat to 350 for 15-20 minutes or until topping is golden brown and fruit is tender.

  8. Very good served warm with ice cream.
