Ginger Crunch

Mum and I used to bake this every week when I was a young girl – yummy

Prep time: 10 minutes
Cook time: 20 minutes
Serves 20 people

Ingredients

  • 125 g butter, melted
  • 1/2 C sugar
  • 1 1/2 C flour
  • 1 t baking powder
  • 1 1/2 t ground ginger
  • Icing:
  • 80 g butter
  • 2 T golden syrup
  • 2 t ground ginger
  • 1 1/2 C icing sugar

Directions

  1. Mix dry ingredients in bowl, add melted butter and mix well.

  2. Press into paper-lined slice pan.

  3. Bake at 180oC approx 20 minutes.

  4. Immediately when taken from oven, top with icing.

  5. For icing:

  6. Gently melt all ingredients together over low heat.

  7. Pour over cooked base, and let set.

  8. Note: For thicker icing, add extra half icing ingredients.

  9. Cut into squares.
