Perfect Corn bread

Ingredients

  • 1C flour
  • 1 cup yellow corn meal
  • 1/4 C sugar (opt)
  • 4 t baking powder
  • 3/4 t salt
  • 1 C milk
  • 1/4 C oil
  • 2 eggs

Directions

  1. Bake 425-hot greased cast iron skillet

  2. Sift flour,sugar, baking powder and salt together.

  3. Stir in cornmeal

  4. Add eggs,milk and shortening

  5. Beat with electric mixer until just mixed

  6. Pour into hot greased skillet

  7. Bake 12-15 minutes
